Product mix (PMIX) is the item-by-item breakdown of what sold: how many burgers, how many margaritas, how many specials, over a shift, day, or date range. It is one of the most-used reports in a restaurant POS because it turns raw sales into decisions.

PMIX is the raw material for menu engineering and for forecasting prep and purchasing.

  • Feeds menu engineering: pairing each item's sales volume with its contribution margin shows which dishes to promote, reprice, or cut.
  • Drives purchasing: item counts tell the kitchen what to prep and what to order.
